Our founder Ed, was bored and at a loose end during the pandemic, waiting to go back to work at a famous Michelin Three star Restaurant.
Ed always loved fried chicken and whilst most chefs adorn the back garden DIY pizza ovens on their sunny days off to try and perfect the perfect crust, Ed would be slinging out Fried Poultry to friends and family. So when the second lockdown happened Ed took his passion for great ingredients and great fired chicken to the streets, investing his his time in creating our CHIX Takeaways and Pop-ups.
Quickly we found our home at our own chicken shop in Haymarket and then soon after at The Edinburgh Street Food Market.
The first summer we were invited to be a vendor at the fringe festival where you'll still find us every year. You'll also sometimes find us at events at Murrayfield Stadium!
We have gone from strength-to-strength and just focus on reinvesting and building the business to be as strong as it possibly can. We put all our effort into this being something meaningful and special to us and hopefully that translates to the product for the customer.
We spend a lot of time on perfecting our recipes. Every single batter, sauce, bun, and side is made in house. Anything we can possibly make ourselves we do! We've even got our own, newly opened unit, where we bake all of our own buns.
We use local and seasonal ingredients sometimes super seasonal like wild garlic!
We make all our own fruit coolers with fresh fruit and fresh herbs with ingredients like Rhubarb and Magnolia and Apple and Verbena.
